PLAIN CURRY DISHES  
A Sauce of medium consistency. A Basic but wide range of oriental spices giving a rich flavour.  
VINDALOO DISHES  
Related to the Madras, but involving a greater use of garlic, tomato, lemon, ginger and black pepper. It owes its name and in parts its contents to the early Portuguese settlers.  
DANSAK DISHES  
Dansak is prepared with Oriental pspices, pineapple, lentil and lemon juice to add sweetness and a sharp, sour flavour.  
BHUNA DISHES  
A combination of a rich blend of spices fried together to provide a dish of medium strength and rather dry consistency compared with curry.  
MOSHORI NEW  
Cooked with mild spices, lentils garlic and fresh coriander, a very mild but very tasty dish.  
KURMA DISHES  
A preparation of mild spices in which cream or milk is used to create the delicacy of its flavour and creamy texture.  
MADRAS DISHES  
A South Indian version of the dishes found in Central and Eastern India, having a greater proportion of Garam spices, which lend to a fiery taste to its richness.  
PATHIA DISHES  
Here the charectaristics of the dish is delivered from the use of tomatoes, with a mixture of spices.  
DUPIAZA DISHES  
A method of preparation similar to Bhuna, where onions are mixed with spices and fried briskly.  
KASHMIRI DISHES  
A mild dish cooked with bananas, cashew nuts and sultanas.  
MALAYAN DISHES  
Preparation of mild spices in which cream banana and pineapple are used to create a unique flavour.
